Sunshine, soccer and company

With summer comes all the fun and chaos of doing too much in quick spurts of time...example...Canada Day long weekend was spent at the soccer field in Kelowna with both kids on two different teams in the tournament.  That saw Greg and I driving in different directions with one kid in tow.

Once we were home again we unpacked, washed clothes then repacked for the kids to head out to staff training at camp where they stayed for about 3 days, then home again, unpack, wash, repack and off to the lake to stay with friends at their cabin, which was amazing for those two sun filled, water soaked days...


Then it was home again in time to clean the house, wash clothes and get ready for Greg's sister and family's visit.  This was nice, it was more downtime then we had had in a few weeks, I also took this time to try a new recipe that I found on Pinterest...huge huge hit with everyone from 8 yr old niece to 40 something adults:  I found the recipe here along with all the skookum pictures that every mom foodie on the net does but that I don't have the energy or patience to do...

Chunky Monkey Brownies

Prep time 15 mins
Cook time 30 mins
Total time 45 mins
Serves: 24

Ingredients
  • 2 cups all-purpose flour 
  • 1 ½ cups brown sugar, packed
  • ½ cup white sugar
  • 2 sticks (1 cup) unsalted butter, softened
  • 2 large eggs
  • ¼ tsp. salt
  • 2 tsp. vanilla
  • ½ cup banana, mashed with a fork (about one medium-large banana)
  • 12-oz. semi-sweet chocolate chips
  • ¼ cup chocolate chips for the top
Instructions
  1. Mix butter, eggs, sugars, salt and vanilla with mixer until well combined.
  2. Add flour, mashed banana and chocolate chips.
  3. Stir to combine.
  4. Spray a 9x13” glass baking dish with cooking spray.
  5. Spread brownie mixture into prepared pan.
  6. Smooth the top with a rubber spatula.
  7. Sprinkle chocolate chips on top.
  8. Bake at 350° for 30-40 minutes just until lightly golden brown, and a toothpick inserted in center comes out clean.
  9. Cool completely before cutting into bars.
